Miracle Noodles with Peanut Sauce

I have a stash of Miracle Noodles in my pantry and I really need to use them up. These noodles have been made with the chinese yam. They come in a package of water. They have kind of fishy smell to them, but when rinsed thoroughly and then blanched for a minute in hot water and dried off actually have a pretty good texture for a vegetable noodle. As you know when you are fighting diabetes that the carb factor in your diet really messes with your blood sugar. These have been advertised as the way to beat the carb factor. The first couple of times I used them, I dont think I flavored them enough to make them pallatible. So this time I heavily salted my water just like I would with regular noodles.

Miracle Noodles with Peanut Sauce

1 3 oz package Miracle Noodles Angel Hair Style

Peanut Sauce

1/2 cup peanut butter

3 tsp sesame oil

2 T soy sauce

2 tsp Asian Sweet Chili Sauce

1 cup hot Pasta Water

Blanche Miracle noodles in salted water for 1 minute. Drain thoroughly and pat dry with a paper towel.

In a frypan, add peanut butter, sesame oil, soy sauce, Asian Sweet Chili Sauce and enouth pasta water to loosen up the sauce. Put blanched noodles into the sauce and coat thoroughly.

Serve in a bowl garnished with sesame seeds and green onions.
