Southern Biscuits and White Sausage Gravy

This is a southern staple, no doubt. In the south it is all about the pig and what you can do with it. It is the latest trend to put bacon in and on everything. Maybe that is why the pork producers love certain networks because of their unabashed love of this animal and its various components.

You do not have to eat the pig if you do not want to. In my version of White Sausage Gravy, I am substituting Morningstar Farms sausage patties for the pork component. It is a very good substitute for this particular dish.

Living healthy does not mean the food has to taste bad, with all the spices and fresh produce available today, vegan food is most times much more complex than a meat and potato dish from the past.

Southern Biscuits

2 cups flour

1/3 cup butter flavored crisco shortening

2 T sugar

2 1/2 tsp baking powder

1 tsp salt

1/2-3/4 cup cold soy milk or enough liquid to form dough into a ball

In a medium mixing bowl, using a pastry blender, blend flour, sugar, salt, baking powder, and crisco shortening until it looks like a coarse meal. Add the milk until forms a ball.

Gently roll out the dough onto a flour surface and shape with your hands into a circle about a 1/2 inch thick. Using a 2” cookie cutter, cut out the biscuits and reshape the dough and continue to cut biscuits until the dough is used up. Place biscuits on a cookie sheet sprayed with non-stick spray.

Bake at 400 degrees farenheit for 12-15 minutes or until golden brown.

White Sausage Gravy

1 pkg Morningstar Farms sausage patties, diced

1/2 large onion, diced

2 T oil

2 T flour

salt and pepper to taste

1 1/2 cups soymilk

1/2 tsp nutmeg

In a medium frypan, heat the oil and add the onion and sausage and cook for 5 minutes. Add the flour, salt and pepper and nutmeg, cook for 2 minutes. Slowly incorporate the milk. Cook until thickened.

Pour over the biscuits and enjoy.
